What makes Alltech so special?

Lexington Brewing Company dates all the way back to 1794, but had long been abandoned when Dr. Pearse Lyons acquired the 200-year-old brewery in 1999. As it turned out, Dr. Lyons was the right man for the job. As a 5th generation barrel maker, Lyons became the first Irishman to earn a formal degree from the British School of Malting and Brewing. During his schooling, he worked closely with both Guinness and Harp Lager. He became familiar with the brewing process and exactly what needed to happen in order to craft a flavorful and memorable beer.

Later, he spent time as a biochemist for Irish Distillers, the distillery famous for giving the world its beloved Jameson whiskey. Lyons’s family history and his formal training came together to make him uniquely qualified to work with both breweries and distilleries. There was only one problem: where could that happen?

The Town Branch stream is Lexington, Kentucky’s limestone rich waterway, the same waterway that has attracted so many distillers over hundreds of years. To be legally called bourbon, a spirit must be mostly corn based and aged in new charred-oak barrels. Furthermore, bourbon can only be distilled in the United States. There is no rule on what water needs to be used during the distilling process, but any bourbon enthusiast will agree: the best bourbons are made from Kentucky limestone water.

Mineral-rich limestone water has a high pH, allowing it to filter out impurities like iron, a known bourbon killer. Several centuries ago, limestone-like water couldn’t be engineered in a lab, so it was vital for distilleries to find a place on the Town Branch stream where they could have consistent access to this bourbon-holy water. Oddly enough, there hadn’t been a distillery built near the limestone-rich Town Branch stream in over 100 years when Dr. Pearse Lyons broke ground on Town Branch Distillery in 2011.

Lyons’s newly built distillery sat right next to the 200 year old Lexington Brewing Company. The complex became one of the few in the entire world to feature both beer brewing and bourbon distilling. Lyons experience and talent allowed him to make the most of this combination, creating a renowned and authentic bourbon barrel beer. In 2012, Town Branch Distillery was officially added to the Kentucky Bourbon Trail®.
